Hi Nicole! I leave it out on the counter overnight, I just cover it with a cloth or silicone mat. I've never tried putting it in the fridge but I think it would just slow down the rising of the yeast. Happy bread making! Let me know how it turns out :)

When I must add 1/3 cup of vegan cheddar shreds. It's in the ingredients but not in the recipe.
