Making homemade tofu is a simple process that requires a few basic ingredients and equipment. Here is a basic recipe for making tofu at home:
Ingredients:
1 pound dried soybeans
1/4 cup nigari or Epsom salts
Equipment:
A large pot
A colander or strainer
Cheesecloth or a tofu press
A blender or food processor
Instructions:
Soak the soybeans in water overnight.
Drain the soybeans and transfer them to a large pot. Add enough water to cover the soybeans by 2 inches. Bring the water to a boil and then reduce the heat to low and simmer for 1 hour or until the soybeans are soft.
Drain the soybeans and transfer them to a blender or food processor. Add enough water to make a smooth paste.
Pour the soybean paste into a cheesecloth-lined colander or tofu press. Press out as much water as possible.
Mix the nigari or Epsom salts with 1/2 cup of water, then pour it over the soybean curds in the colander or tofu press.
Press for about 30 minutes. Then transfer the tofu to a container and refrigerate for at least 1 hour before using.
Note: The time to press will vary depending on the desired firmness of your tofu.
And that's it! You now have homemade tofu that you can use in a variety of dishes. Tofu can be marinated, sautéed, deep-fried, or grilled, and it can be added to soups, stews, and stir-fries. The possibilities are endless.
