Vegan Broccoli and Cheddar Quiche

This quiche was made up completely by accident and it is absolutely delicious and I can't wait for you to try it!



I am so excited to share with you one of my favorite vegan quiche recipes: Just Egg Broccoli Quiche. It’s an easy and effortless recipe that is perfect for breakfast, lunch, or dinner. This recipe is so delicious, I find myself making it over and over again! The recipe is vegan, so it's great for anyone who is looking for a healthy and plant-based meal.



One of the best things about this recipe is that it's really easy to make. The preparation time is just 30 minutes, and you only need a handful of ingredients to make it. You'll need 2 stalks of celery, 1 small onion, 1/2 cup of broccoli, 1/2 tsp of black salt, 1/4 tsp of pepper, 1 tsp of onion powder, 1 tsp of garlic powder, 1/2 cup of Just Egg, 2 tbsp of green onions, 1 tbsp of pickled jalapeños, and 1/4 cup of vegan shredded cheese.


To start, preheat your oven to 350°F. Heat a pan over low to medium heat, and add a generous drizzle of olive oil. Add 2 stalks of diced celery, 1 small diced onion, and 1/2 cup of chopped broccoli to the pan and sauté until tender, stirring occasionally. Season the vegetables with 1/2 tsp of black salt, 1/4 tsp of freshly ground black pepper, 1 tsp of garlic powder, and 1 tsp of onion powder. Continue cooking for an additional 3-5 minutes until the flavors meld together.



While the vegetables are cooking, make the crust. In a separate bowl, combine 1 cup of flour and 1/4 tsp of salt. Gradually incorporate 1/4 cup of coconut oil, blending until the mixture has a crumbly texture. Add water as needed to create a workable dough. Once the dough comes together, roll it out and gently press it into the base of an oven-safe dish.


Next, whisk together 1/2 cup of Just Egg with 1/4 cup of vegan shredded cheese, 2 tbsp of sliced green onions, and 1 tbsp of diced pickled jalapeño in a bowl. Stir in the sautéed vegetable mix. Pour the egg mixture into the prepared pie shell.






Bake the pie at 350°F for approximately 20 minutes or until it is just set. Increase the oven temperature to 400°F, and brush the crust with a little bit of olive oil to promote even browning. Return the pie to the oven for an additional 10 minutes or until the crust is golden and crispy.


Allow the pie to cool slightly before slicing and serving. This Just Egg broccoli quiche is so creamy and flavorful and is perfect for any time of day. It's a great way to get in your daily dose of veggies and is sure to be a hit with everyone in your family. Enjoy!
