THE BEST Vegan Double Chocolate Chip Muffins

Updated: Oct 8

Where these muffins came from:

These muffins were inspired by a memory of getting double chocolate chip muffins at Mcdonald's as a kid. They were such a fun Saturday morning treat that I looked forward to all the time. I got a craving for them and had to try and re-create them exactly how I remembered. And I don't think the ones I used to eat come anywhere close to how delicious these ones are!

Double chocolate chip muffins are a delectable treat for chocolate lovers. Each bite is filled with a rich chocolate flavor, and the soft, moist texture of the muffin is perfectly complemented by the crunchy bits of chocolate chips scattered throughout. The aroma of fresh-baked muffins wafting from the kitchen is enough to make anyone's mouth water. Whether enjoyed as a breakfast treat or a dessert, these muffins are the perfect indulgence for any occasion. With their deep chocolate flavor and irresistible texture, double chocolate chip muffins are a delicious treat that will leave you craving more.

Why using hot water is key:

Adding hot water to this recipe can improve the texture and flavor of the muffins in a few ways. First, it helps to dissolve and bloom the cocoa powder, which enhances its chocolate flavor and gives the muffins a richer, deeper color. Second, the hot water helps to activate the baking soda, which helps the muffins to rise and gives them a tender crumb. Finally, the hot water helps to hydrate the dry ingredients in the batter, which can help to create a more moist and tender muffin. Overall, adding hot water to this recipe can help to create a more flavorful and delicious muffin.

As for notes and variations on this recipe, you could try using different types of flour, such as whole wheat or almond flour, for added nutrition and flavor. You could also experiment with different types of non-dairy yogurts, such as soy or almond yogurt, for different flavors and textures. Additionally, you could try adding in other mix-ins, like chopped nuts or dried fruit, to add even more texture and flavor to these muffins.

Notes:

  • To make the flax eggs, you can mix 2 tablespoons of ground flaxseed with 5 tablespoons of water and let it sit for a few minutes until it thickens.

  • Be careful not to overmix the batter, as this can lead to tough muffins.

  • You can use any type of dairy-free yogurt in place of coconut yogurt, such as soy, almond, or cashew yogurt.

  • If you don't have coconut oil, you can use any type of neutral-flavored oil, such as vegetable or canola oil.

  • For an extra chocolatey flavor, you can add some chocolate chunks or chopped chocolate to the batter along with the chocolate chips.

  • These muffins can be stored in an airtight container at room temperature for up to 3 days, or in the fridge for up to 1 week.

Variations:

  • If you prefer a sweeter muffin, you can increase the amount of sugar to 1 1/2 cups.

  • For a gluten-free version, you can use a gluten-free flour blend in place of the all-purpose flour.

  • You can add some chopped nuts, such as walnuts or pecans, to the batter for some extra crunch.

  • If you don't have cocoa powder, you can use carob powder as a substitute.

  • For a healthier version, you can use coconut sugar or maple syrup in place of the granulated sugar.

  • If you want to make these muffins even more decadent, you can top them with a chocolate ganache or frosting.
